• "... kimchi ..." From the official Kimchi webpage: True kimchi is made with a rich variety of ingredients and is set to ferment naturally, usually for some months in special porous crocks.

  (1) Salt Chinese cabbages and/or radishes
  (2) Wash the salted vegetables with fresh water
  (3) Add spices and seasonings such as red hot pepper, garlic, fish sauce and ginger.
  (4) Keep the spiced vegetables in a cool place for a few days. This process let the vegetables to undergo a process of naturally mixed lactic acid fermentation.

• "... Claude Rains ..." A reference to one of actor Rains' most famous lines in one of his most famous roles, Prefect of Police Louis Renault in the film, "Casablanca:"
